'DATE AND BRAN MUFFINS A LA ANITA PAGE'~

Not only is Anita a Screen Goddess, but a Domestic one, too.

Date and Bran muffins are one of the favourite recipies of Anita Page; she prefers to make them herself when this is possible. Anita particularly enjoys them for luncheon; when she is at home, a large dish of salad, vegetable or fruit, accompanied by one or two of her favourite muffins, is her preferred lunch menu. These muffins are equally acceptable for breakfast, or with coffee for the mid afternoon relaxation period which used to be called tea time.

Directions ~

Take two tablespoons of shortening, one fourth cup of sugar; two teaspoons of baking powder; one cup chopped dates, two eggs, one cup of sour milk, one cup bran flakes, one cup white flour, one half teaspoon of soda, and one fourth teaspoon of salt. Cream the shortening and sugar throroughly; then add the eggs, well beaten. Mix and sift flour, baking powder and salt, then add the bran. Put the soda in the sour milk and beat until it foams. Add this to the shortening sugar and egg mixture. Then add the flour and bran mixture, beating well. Sweet milk may be used, omitting soda. If a browner product is desired, brown sugar may be used, including the soda with the flour and baking powder; or molasses, using three quarters of a cup instead of the sugar. These muffins take twenty minutes to bake, and make one dozen. Use an oven at 370 degrees F.

.....Perhaps the attractively patterned and gayly colored kitchen utensils are responsible for the interest being given to domestic accomplishments this season~ at any rate the girls are indulging in a series of cooking experiences that are bringing delectable results. Anita Page, claims that in cake baking the most important part is in properly blending the ingredients and also seeing that the oven is of the right temperature.

ANITA'S 'LADY BALTIMORE CAKE'~

The thrill of being able to display a cake - with three layers that are light and delicately tasty - with frosting that achieves the right firmness - is an accomplishment that the modern girls are being to discover.

Acording to Anita Page, Metro Goldwyn Mayer player whose latest appearance before the screen is in Joan Crawford's starring picture - 'Our Blushing Brides', it can be likened to the achievement of a good well done screen role - the pleasure in learning a piece or the feeling of triumph realised by being able to make a dress.

A cake which she has found simple to make - providing care is taken in properly blending the ingredients and care of oven temperature is taken.... is the 'Lady Baltimore Cake'. Calling for one cup sugar with 1/2 cup shortening, working the fat into the sugar until thoroughly creamed, without lumps or sugar grains. Next 2 cups flour, 1 teaspoonful baking powder and 1/2 teaspoonful salt is sifted together and stirred into creamed mixture, alternately with 2/3 cups milk. To this 3 stiffly beaten egg whites are added with 1 teaspoonful vanilla stirred in. The batter is then placed in well-greased layer cake pan and allowed to bake half an hour in moderate oven (350 degrees F). For filling cook 1/2 cup water and 1 3/4 cups sugar over slow fire, stirrinf until dissolved, but not boiling. When syrup forms small ball in cold water it should be removed from fire and poured over 3 stiffly beaten egg whites and beaten well until mixture turns to creamy white colour and begins to set. Cool and add 1 teaspoonful of vanilla. Half of frosting should be used for top of cake and half for filling. To the latter add 1 cup chopped raisens, 1 cup chopped walnuts, 1/2 cup blanched, chopped almonds and 1/2 cup chopped candied cherries.
